Potassium Sorbate
Potassium sorbate is a white, odorless, and tasteless salt synthetically produced from sorbic acid and potassium hydroxide. Widely used in food preservation, it is recognised as preservative E202.
Its primary function is to inhibit the growth of moulds and yeasts, helping protect against spoilage and extend shelf life. Its effectiveness increases under acidic conditions, where a greater proportion exists as sorbic acid, the active anti-microbial form
